Overnight oats.

Good morning!* Since I am not a morning person, and because I gave up McMuffins for lent, I had to find a suitable breakfast alternative that was both quick and delish. Thus my fascination with overnight oats.


Recipe goes as follows:
1/4 cup rolled oats
1/4 cup unsweetend coconut milk (I bought the So Delicious pack from Costco)
1/4 cup plain greek yogurt (I get the nonfat kind)
1 TBS chia seeds
1 banana cut in half and then cut those halves in half and then cut those halves of the half in little pieces (need a pic? maybe in my next post)
Honey (as desired)


I add my ingredients starting with the oats, then the chia seeds, yogurt, coconut milk, banana and mix that all together and then add some honey (mix it all together again) for decoration (my initials below) + sweetness:

Then just stick this in the fridge and let the oats + chia seeds soak everything up! I normally will make this before I go to bed and eat for breakfast. Some of my favorite toppings include: almond butter, coconut chips or sliced almonds.
